Last weekend’s dinner was a tri-tip roast reverse seared plus some wagyu beef burgers, both were fantastic (no Pics of burgers sorry). Last evening was competition style St. Louis ribs and Beef short ribs. Family loved the beef ribs but I solidified I’m definitely a pork rib fan over beef . Hadn’t had the chance last weekend to share. Been a little busy at work lately, we supply and repair equipment for manufactures.

I confess.....I cheated on my SF and used my WSM for Easter dinner. 6 lb center cut pork loin, brine for 18 hours, rubbed and wrapped in bacon.

This past weekend, first pork butt, first picture is about 8 hrs in, last picture is when finished. Didn’t get anymore as once I started to pull it, everyone was ready to eat, including me!!!
