Grocery store had whole pork loins for buy one get one, so I now have two 4.5lb loins. I was planning to slice one up into thick chops. Not sure what to do with the other. I know I can do a rub or salt\pepper low and slow, but looking for something a little different. Possibly butterfly and stuff, then wrap in bacon??? Maybe something Tex\Mex with jalapeno or chipotle stuffing? Or Yucatan al pastor style with pineapple? Slice it thin, marinade and stack it on a skewer?? Any recipes or thoughts????
