Trimmed spare ribs

EX6, 3, 22” kettles, 18” kettle and a e310 gasser
Picked these up from Fry’s. Trimmed them up, and did a little cross hatching on the back after pulling off the membrane on the back. Will follow up with more picks as we go. Seasoned with salt lick dry rub and some sweet honey brigade seasoning.

fantastic. I got some st louis style ribs a month ago and looking to thaw them and get them smoking this weekend!
 
Three hours in. Spritzed them with apple cider vinegar/apple juice on the hour for three hours. Just wrapped em in foil with the leftover juice. 2 more wrapped then one more unwrapped.

Ok been unwrapped for an hour...just probed and I’m only getting a temp of about 145 at the highest? What the pip? Been on there for 6 hours....running at 225. Well I just pushed it up to 300. Maybe another half hour or so.
