Thank you for THIS information.Don't worry about the Clorox wipes. They don't remove any protective compounds of the stainless steel or porcelain and are safe to use on all nonporous surfaces. I have been using them on the exterior and interior of the grill for 8 months or so with no issues.
The main benefit of the Clorox wipes is that they easily remove smoke soot and grease. Many SmokeFire users use them.
Well when I use a water pan I always put (carefully) boiling water in the tray.So this pan goes under the meat? Does that lower the temp any?

Reason, you do not heat up the water. saves on pallets.
