Don't worry about the Clorox wipes. They don't remove any protective compounds of the stainless steel or porcelain and are safe to use on all nonporous surfaces. I have been using them on the exterior and interior of the grill for 8 months or so with no issues.

Well when I use a water pan I always put (carefully) boiling water in the tray.
Reason, you do not heat up the water. ;) saves on pallets.
