Anyone have plans to use SmokeFire for Christmas meal?

Was trying to think of something to do for Christmas and wondering what others have planned? Might want to steal your ideas! 🤣
 
As the stuffed chickens are being done on the rotisserie on my master touch kettle, nearly all of the sides are being done on the smokefire.

- Sprouts in a cast iron pan with bacon.
- Carrots in a honey glaze.
- Cauliflower cheese
- Pigs in blankets

Once those have been removed, going to keep them warm in a low oven and crank the heat up for the roast potatoes in goose fat. They'll be parboiled first to get them nice and fluffy.
 
Sounds fantastic! What is your sprouts recipe?

I halve all of the sprouts and add them flat side down in a cold cast iron pan. I then add rashers of streaky bacon over the top of them. I then roast it until the bacon has crisped up and has rendered all of the fat over the sprouts.

I'm not sure if you call it's streaky bacon on that side of the pond, but it's bacon cut from the belly for the good fat content. Pancetta would also work.

Picked up this rack of pork at Costco a few minutes ago, thinking about sticking it in the fridge for Christmas.

I’ve been doing bacon brussel sprouts on the grill in a CI pan lately, they are amazing!!

Yes, that's what I'm talking about! I can't go back to boiled Brussel sprouts, I just can't.
 
Using it for sure. For what I don't know yet. Bite i wanna do wagyu ribeye slices on a slice of French bread with chimicur or kimchi and cheese. Don't know yet. Starter ill make carpaccio prob. Main I will prob do shortribs. The rest I don't know yet lol
 
Yeah rib roast or tenderloin. To be determined.
