First brisket on the 600. 10-1/2 hours at 225. Used about 2” of pellets for the entire cook. Came out great.

today i activated my smokefire ex4 again after a couple of months with pork bellies, duroc loins, smoked sous vide picanha, pickled pork loin and pork shoulder - it all turned out delicious 🙂

Not a Smokefire cook, but did a couple fat ribeyes on the Weber Summit Charcoal
 
My first cook on the XL 600 that arrived three days ago was a 5# beef tenderloin for Thanksgiving dinner. It was a risky choice as I am completely new to pellet grills, but thanks to the Meater Pro and Weber's software it was a foolproof experience. 1) Roast just put on the rotisserie. 2) Slices after 3 hour (low and slow) cook pulled at internal temp (IT) of 130 and 1 hour rest with carryover to IT of 135. 3) Plated.

This is clearly the WRONG time of day to be checking in here. Its about 1am and I am salivating and suddenly very hungry!
 
Baby Back Ribs - right side Weber Rub with Chipotle Apple BBQ Glaze - left side Heaths Competition Rub with Jack Stack BBQ Glaze. Both sides are delicious.

Reversed Seared Cowboy Steak
Smoked on the Searwood till 120 then seared for approx 3 minutes each side on the flat side of the Grill Grates. Delicious !!

Prime Rib Roast - Bone-In = 9lbs

1 hour SmokeBoost, now it's at 400°F. Waiting for the app to catch up to this and stop telling me it'll be done in 3 days. I don't have 3 days. I have ~7 hours of daylight left. Should be done before that.

Update 1: Time 2 hours in
I went out to check the water level in the pan and said "Oh my God, yes!" and had to take a picture for everyone.

Update 2: 4.5 hours in
Alerted that internal temps had reached 162 and to remove and let rest. System is almost done shutting down as of this update. Roast is on a ceramic platter inside my kitchen oven, completely uncovered, oven is not turned on.
