Lots of fish and some shrimp and portobello mushroom skewers to wrap up the weekend. Installed the new hopper slide, fully cleaned out the cooker and she ran awesome. Got right up to temp and cooked awesome. Interesting but when the grill was new when heating up I’d have equal flame coming out on both sides of the grill, now I seem to get more on the right side, not a big deal, as it’s cooking fine and holding heat well. Now to get one of those gaskets I’ve seen a few of you posting about to help seal in all that heat and smoke.

I finally found time to assemble my EX4. It was originally scheduled for President's Day delivery but Seko was late and then I've been too busy to ass it. Anyway burn in went flawlessly. First cook was wings and I threw in a skillet of bean. So far, so good. The right side did seem to be a bit hotter on the 500 degree cook.View attachment 430View attachment 431

My EX6 is definitely a little hotter on the right. But I have been using that to my advantage depending on what I’m cooking. If low and slow, it doesn’t really seem to make a difference. Keep experimenting!
 
Looks great. How'd you get that nice char on the outside? What was your cooking temp?
Reverse seared these. Cooked m until 110F got m off Smokefire to 600F and 30 x 30 x 30 x 30 sec seasoned them with hardcore carnivore black. If you never tried that rub before I say order it yesterday 😂 That stuff is soooooooo good on steaks.
 
Season wings with hardcore carnivore red day before. Smokefire at 225F cook until internal temp 160ish get them off Smokefire to 375F season wings with hot sauce ( I used Front street heat) throw m on for like a minute a side or so 😊 Let them rest for about 5 min.
WHAT!!! Hardcore Carnivore???? YUP! I am Texas guy and went to school @ UT Austin so def support that company! In fact I JUST got 2 black, 1 red, 1 amplify, 1 Meat Chelada yesterday in the mail! I have only ever used the black. Cannot wait to try the other ones!

TOTALLY AGREE! We need to start a new discussion for things like this that our forum users use and recommend. HC Black is amazing. It was not the first but dang I think its the best.!! Do not fear the black. It is not burned AND it does not taste burned. Try some, if you do not like it send me the rest of the bottle for testing and I will pay the shipping!! :)
