First ribs used 2/2/1 method. Home made Jim beam bbq sauce and some garlic prawns to stop Her ladyship picking at the ribs before they we’re ready.

Finally got to try my hand at a couple tomahawks yesterday. Reverse seared, Came out great! Along with some Jalapeños, hasselbacks, and veggies all smoked/grilled

I actually attached the wrong photos at first. I feel like I have to brighten everything up because my phone takes such dim photos, and I’m not about the break out the SLR for my cooking or my wife is really going to start scratching her head. Those suckers were super red/pink but The original photos looked like I overcooked.

Finally got to try my hand at a couple tomahawks yesterday. Reverse seared, Came out great! Along with some Jalapeños, hasselbacks, and veggies all smoked/grilled
I followed Captainmike but I did not do the reverse sear. I followed more of an oven broiler technique with butter and garlic basting, which did not flip the meat. It came out OK for the first time with tomahawks except the bottom side was a little more done than the top. And there are no pictures of it coming off.......

Can’t compete with that chicken shawarma, but A couple poke hops and a small sirloin with some mixed veg in a skillet.

Dude that looks killer!! Tell me more! What cut of chicken?
They were chicken thighs, pounded down to 1cm thickness, don't know whether it was the yoghurt or lemon juice, but something broke them down into really tender pieces of meat after marinating.

The homemade Tzatziki went well with it, normally just cut the cucumber into cubes, but shredded it this time, with a grater and squeezed the water out of it in a cloth before adding to the yoghurt, definitely improves it.

The Kebab Spike is such a handy little device for using with the Smokefire, done this and Taco Al Pastor with it now and both cooked perfectly using it. Just need to find some more things suited to make with it now. Enjoying the kebab style meals I can do now.
