X4 Cooking Baby Back Ribs

Hello fellow smokers,

I’m looking for advice here…I’m having trouble with length of cook time for three racks of baby back ribs. The last cook was Saturday 1/29. I put the ribs on at 11:40 for 2 hrs with Smokeboost. At 13:40 began 250F cook until the meat was at 165F. Pulled the racks and wrapped them in butcher paper and back on the smoker. Pulled them at 19:40 and let them rest for 30 minutes. They were edible but under cooked. Shut the smoker down and put them back on the smoker the next day to finish them off. Not a good over all cook. I used the COSTCO Swift Premium baby back ribs at 9.98 lbs.

I avoid the ribs at Costco…I had a buddy try them there several times, always spoiled out of the bag. So I just dont get them there. When do ribs I’ll put them at 225, for about 3 hours, meat side up.Then wrap in foil, with butter pads in the foil, meat side down, for about 2 hours. The flip them, meat side up, with foil open. Key is to use a temp probe and pull them when around 190-200. I’ve done them on higher heat. Again using a meat probe is very helpfull. I also spritz mine every hour during the first part of the cook. The bend test is another decent way to tell if ready.
Another thing you can try…when I have cooked the on charcoal..I would brine them overnight.
