I think that is what that store does with it, they trim the fat cap off and cut small steaks so they priced it that way for me. I showed the butcher a pic of what I wanted and asked for no trimming. He nailed it.. I'm afraid if you asked for sirloin roast tips you would get that. Check out this video. He knows how to do it right.

Here's a tri tip I did a few weeks ago before I got my Smoke Fire. Did it indirect on my Weber kettle and slow and sear.
