Super Bowl menu!!

Picked up my Super Bowl brisket today. This will actually be my first SF brisket--a healthy 13.5 lbs. The crowd will be small (thanks, COVID), so even if the whole thing doesn't turn out great, I'm sure there will be enough that does to keep people happy.

Bacon-wrapped dates. You can skewer them or stab them with toothpicks before cooking. Cook them when the heat is nice and low. All the fat will cause flame-ups. They are one of the best things I've ever eaten. Again, be careful of those flame-ups.

Definitely a favorite for our house as well. If you want a bit of a crunch try putting 1 or 2, depending on the size of your dates, blanched Marcona almonds (which are very mild in flavor) in with your stuffing of choice. They compliment Medjool Dates especially well and add a bit more texture. The balsamic glaze jpsBBQ mentioned sounds like it would take thing up a notch or two as well. I am going to try adding that next time for sure.
 
We finally settled on our Super Bowl eats:

Chicago style Italian Beef sandwiches with Hot Giardiniera (dipped of course) and twice grilled stuffed jalapenos boats. Half of the jalapenos stuffed with a more traditional cream and cotija cheese filling spiced up with a mix of chili powder, cumin, paprika, garlic powder, and a bit a cayenne, and half with a cream and mozzarella filling infused with homemade hickory BBQ sauce, bacon crumbles, & caramelized balsamic red onion (finely minced).

Hopefully the game is half as good as all the awesome foods being cooked by everyone. If so, it sounds like a fantastic time will be had by all. Cheers!

Oooo, I’ve done those before. I think I stuffed some of them with goats cheese maybe and balsamic drizzle? I remember them being delicious. Enjoy!
Alright, so I want in on the bacon wrapped dates madness. How would you guys cook them on the WSF? Guessing if low and slow you would kick it up at the end to crisp the bacon?

In my experience, there is no need to raise the temperature above 300. If you have patience, the bacon will render more fully at the lower temperature s and it won’t shrink up so dramatically as it does with higher heat application. Go 250-275 in my opinion and be patient. Also recognize that once removed the bacon will firm up a bit more than it appears on the grill. I used to do the higher heat method and lowering the temp has really improved my game. This is Bourne out through many ABT cooks which are nearly identical to this one.

Hahaha. :D I grew up on the south side of Chicago which has always enjoyed a huge rugby community. I played both sports until college when I committed to hockey and all I can say is football hurts a lot more but they're both a great time. All that being said...
