Did tacos al pastor, elote, roasted some tomatillos for salsa verde and then burgers, shrimp, and mahi mahi...excellent cook for the weekend!

Now that’s what I’m talking about! That looks amazing. I’ve been wanting to do some seafood.
 
So here we go. This was a stressful one 😅. I got a new auger etc. from weber this week to replace my old stuff. Figured to wait and do it after today because I had the in-laws for dinner today. Well that was a big mistake 🤣 I had gigantic grease 🔥 🤣 Not a smokefire problem but a not cleaning it after a cook problem lol

Lots of stressing but I ended up presenting a nice dinner plate, Prime rib, crunchy garlic sauce, hasselback potatoes and mancave onions. All this stressing made me forgot to put my name in the picture tho😑

Recipe:

Prime rib Rub:
I have this rub always in a container:
1/2 cup Black pepper
1/2 cup kosher salt
2 table spoons Paprika
2 table spoons garlic powder.

I always put them in a coffee grinder to mix it well.

Creamy crunchy garlic sauce:
10 cloves garlic minced
1 table spoons of hot dried peppers you like
Cook it in olive oil to gets brown then let it cool
Mix 1 package of cream cheese with 1/2 sour cream.
Put garlic etc. In mixture with 1 table spoon of worcestersauce. Salt and pepper to flavor. Refrigerate until food is doen.

Hasselback potatoes:
Make a compound butter from salted butter garlic, dill and black pepper. Slice potatoes and put slices of the compound butter between it. Aluminium foil them after you did that. And put them on the smoker on 225F.

Caveman onion: fire up some charcoal and put onions next to it. Every 15 min turn them (5 times). Get them out let them cool and peel them and cut in half. Combine them with garlic and parsley in a skillet and on grill aswell.

When grill is full with prime rib, onions and potatoes reverse sear the prime ribs. When they are ready up the grill and check when potatoes and onions are done. Sear primeribs and rest. There is the dinner I made tonight. Picture for this competition in next post. Hope you guys like it and will give it a try
