Salmon Practice

EX6, 3, 22” kettles, 18” kettle and a e310 gasser
So just in case we do a fish theme...did a practice run. Half was a mayo, Tony’s, green onion, and bacon mix. The other half was hoisin sauce. Turned out well. On the SmokeFire at 375, for about 45 minutes. Pulled off at 150 degrees.

Yeah, the mayo one was swooped up quickly, the hoisin was said it goes with chicken, but not salmon.
 
Might have to try that mayo one. I usually use mixture of butter, lemon juice and zest, salt, and pepper.
 
I don’t eat seafood at all , but the wife loves the mayo style cook.
