that looks fantastic. I think with chicken most people make the mistake and overcook due to fear of salmonella. 165 is safe and I cook somewhere around 170 to be safe (180 max). I have been to quite a few BBQ's serving chicken leather when people overcookOne chicken was cooked with butter in the tray and the other with apple. I'd stick with butter.
I also recommend jacking it up to 600 when it hits 150 or 525 when it hits 140.
