One chicken was cooked with butter in the tray and the other with apple. I'd stick with butter.

I also recommend jacking it up to 600 when it hits 150 or 525 when it hits 140.
that looks fantastic. I think with chicken most people make the mistake and overcook due to fear of salmonella. 165 is safe and I cook somewhere around 170 to be safe (180 max). I have been to quite a few BBQ's serving chicken leather when people overcook :)

I don't like dry chicken but if I'm honest, the wife was complaining because she looooooooooves overcooked chicken. She hates slimy chicken, so I gave her the one that I broiled in the oven for 15 minutes. Because it was already at 165 by the time I took it off the smoker to put in the oven. Next time I will go to 175...
