Pork belly burnt ends

I tried this one before with kind of yucky results. Watched meat church video today, and did my best to do exactly how he did these. Only I used Hot Honey Hog, SBR spicy sauce in one pan, and Kraft🤮 brown sugar in the other. (I don’t like Kraft bbq sauce) but these turned out soooo good.

Damn I need to get some pork belly tomorrow. Did they turn out super tender, like melt in your mouth? I've made these twice and they always turn out tough and dry, even if I cut them in thicker cubes, they never seem to get tender enough. I did smoke them right on the rack though, maybe on a cookie sheet would be a better route.
 
Cookie sheet is key I think because they cook in their own juice. Then a light coating of sauce in foil pan and back on the grill for st least a half hour….and the meat parts where not soft but the fatty parts where melt in your mouth so maybe a couple tweaks to make them perfect, but these where very very good.

They look fantastic! I need to get a belly or two and do some cooking.
 
Picked up a big piece of belly at Costco yesterday, quartered it and froze half, the other two pieces were cubed up and dry-brined over night and are on the Smokefire right now. I'm using Jax legendary blend pellets. One batch got bbq rub and will be finished with my wife's honey jalapeno sauce, the other batch will braise in teriyaki and mirin with fresh grated ginger and spring onions.

So how were they? They look spectacular! Those sauces sound good.
 
They were both delicious. My wife really isn't big on pork belly but we had it over rice and she went back for seconds! The fatty bits melted in the mouth while the meaty bits had a very pleasant chew. So easy and super tasty, I'm glad I finally got the hang of cooking belly. Turns out I just needed more patience.
