Desalinated a couple store bought corned beef flats In water for a day. Rubbed with a mix of black pepper, coriander, brown sugar and a few other spices and let sit for two days. In the cooker this morning at 225 with cherry pellets for nearly 14 hours (so much for them being dinner). Anyway, they are resting and will be dinner sandwiches tomorrow. Will add a pic of them sliced at that time.

Turned out very tasty once warmed and sliced. On grilled rye with baby Swiss and brown mustard.
