First SmokeFire Brisket šŸ”„

I bought a disposable aluminum pan, I wonder if it can withstand the heat if placed over the flavorer bars and further, I wonder if it will mess with the circulation of the smoke and air inside the pit. I think those pits are designed like this on purpose...

Maybe I should top rack it and place the pan on the bottom grill? That's a HUGE piece of meat to put on the top rack, though...
Iā€™ve had good luck on the bottom rack with aluminum pans in the flavorizer bars. I took out my top rack and havenā€™t looked back.
Unfortunately a guy in Arizona is making some KILLER top grates and I might have to order one.

Well I ordered a nice custom grate for the top rack, it will be here by Memorial Day. Iā€™m going to do a pork butt and a brisket.

Not sure Iā€™d like that. Really well built for sure. Sorry to be negative, but I see it is larger than the original. I think the fact you have room to slide the original forward and backward (a little more accessibility) is really nice feature over a fixed position. The few inches you can push it back gives greater access to the lower grid.

Keep in mind that Iā€™m a fanboy of the original upper grid though šŸ¤£.

Well, Iā€™m also a big fan of utilizing the upper grate so anything that helps you utilize it more I believe is a winner. I like the plan for sure. šŸ‘šŸ»
