Posted this on Facebook. Seared my first steak, a huge filet, on my new Searwood 600. Smoked at 275 to 100, about 50 minutes. Took the steak off, pulled the probe out and ran the grill to 600. When it hit temp I put it in manual 10. Steak back on 3 min/side, flipped it twice. Took it off to rest at 127.

Exceptionally good steak!

Looks awesome! Hard to tell from pics but how large/thick was the steak and what cut of meat? Any seasoning?
 
It was a giant filet mignon, ~3” thick x 4”x 6” wrapped in bacon and tied. I like to squirt a little soy sauce on most of the meat I grill then just S&P for beef. I use more creative spices (my modified Emeril’s Essence recipe) plus brown sugar for pork. I buy most of my meat at Costco, spice them when I get home then vacuum and freeze them in Food Saver bags. This steak was never frozen.
