Ladies and Gents, it's time for the December Smoke of the Month! So don't waste another minute, prepare your favorite meal, get your pellet hopper filled and your SmokeFire going!

How do I enter?
  1. Post in this thread 1 photo of your favorite cook on the SmokeFire. The photo included must be your photo! It's not required, but we prefer the photo to include your username (on a piece of paper, napkin, etc, be creative!)
  2. Include a a caption along with the photo.
  3. We will leave the contest thread open for 10 days and close it December 27th @ 3:00 PM EST.
  4. After that we will open up the voting and allow the community to vote for the winner!
The winner's photo will be featured on our website and receive a special "Smoke of the Month" badge!

So I tried my hand at bacon brisket. Pork belly from Costco. Cut into 3rds. 1/3 cut up small and seasoned with meat church honey hog, and deez nuts. Sauce used A-1 and chipotle Mayo. That turned out tasty. The other 2/3 I seasoned meat church holy cow and Kinders SPG. 5+ hour at about 300. Also threw down a skillet of Mac n cheese from scratch. Cut up pieces and Mac n cheese where not on for 5 hours. The smaller chunk got way overdone. Just wrapped the larger chunk in foil. Took it out of the fridge two days later. And omgoodness it was so good. I would try this again for sure.

If would have known this I would have possibly entered something different. But it’s all good.
 
Your right, it ain’t pretty!! It’s beautiful! That looks incredibly good!
 
Venison Roast. Smoke boost for about an hour and a half. Seared both sides at 600. Served with horseradish, blueberry pork sausage, root vegetables, and asparagus. Had a glass of a barleywine from the beer cellar.
