Got a Weber SeerWood 600 Saturday from Lowes. No sale, but I got a 10% military discount. Also picked up some utensils and a 20 lb bag of Hickory.
Did the initial burn-off today and man, the Hickory smoke smelled good.
Put the unit together myself right from the back of my truck.
Looking forward to getting the griddle and maybe a few other tools.

History
I've only ever used propane grills or a charcoal BBQ pit before. This will be my first smoker. I was looking for a unit that would potentially "do it all." It was really between this SearWood and the Pit Boss Pro Series. This one won out because I didn't need the 1,598 sq.inches on the Pro Series Elite, and I saved over $500. The Elite series is the only one I could find that came with a stainless steel grill. The SeerWood 600 also comes with stainless steel grills. Win.

I live in Louisiana (very humid air) and I am a Network Administrator for a local Internet Service Provider. I've served in the US Army from 2005-2011 and did almost 2 years to close out my 8-year window in the Louisiana National Guard. My name BeardedRetroGuy is because several years back I tried streaming on Twitch. I play video games, yes. Been playing them since I was a little kid with a Colecovision on the kitchen TV.
A friend of mine got a smoker a few years back. His is one of those with the side-fire-box, but they just put a bunch of charcoal on the bottom and use it as a standard grill. Ever since, I've had this weird idea of learning how to do brisket.... smoked brisket. Now I'm mostly ready to do so. Too bad everyone says I'm guaranteed to screw up my first one.
Only now, it looks like I'll be able to cook all kinds of stuff, including pork spare ribs. I got a roll of butcher paper too.

But I didn't follow the instructions in the app - I probably should have.

I set the grill to 250 and let it get up to temp. I trimmed the skin and fat from the bottom and then seasoned both the bottom and the top. I then put all 8 quarters onto the grill and let it sit for an hour.

At the 1 hour mark, I opened the grill and spritzed on 1/2 water - 1/2 Apple Juice onto the tops of all of them, then closed the lid. Every 15 minutes after that they got another spritz of the apple juice until they were done, roughly at the 3 hour mark.

The chicken is cooked, but the skin is like leather. I cannot chew through it. It's not a big loss, but it would have been nice to have edible, crispy skin with all that seasoning stuck to it.

Next time, I'm following the instructions on the app. It says only 1 hour cooking time at around 450 with flips and rotates included.
