To get the smoke ring I put them on smoke boost for about an hour. Than smoked them at 250 degrees for about 7 hrs. I used beef tallow as my binder and just salt pepper garlic for the rub.
Also I would spritz them with a water bourbon to keep moisture on them.
Pulled them off when they hit internal temp of 202.

Well if it’s any condolence, those ribs had 7-8 votes in the first 2 seconds. So….don’t they look juicy though? Man I’m going to have to try those.
