Searwood XL 600, Genesis II E-410, griddle insert for the Genesis, 22" Kettle
Yellow mustard binder, Meat Church Holy Cow all purpose seasoning.

2.5#ish of Wunderbar Beef Bologna. 225 for ~2hrs & IT of 145. Did a 50/50 bbq sauce & water glaze for about 20 min. at the end. No need for a water pan.

Even my skeptical wife, who rolled her eyes when I bought this, said it was pretty damn good when I made sliders from it.
