Got my new Searwood xl. I've done the initial burn and all. I set the grill to manual and 10, warmed it up and tried grilling pork chops that did not develop any sear. I tried doing this with the lid open and it appeared the temperature dropped dramatically according to the grill, which I understand will happen, but I though that I should be able to sear like I would on a gas grill. Any suggestions would be helpful.
