Boneless short ribs from Costco.

Anyone cook these before? I remember many years ago on the WSM I tried to smoke em like ribs and they turned out terrible. I didn’t have any idea what I was doing anyways so who knows! I picked this pack up and from what i have read they aren’t really short ribs????
I was thinking of trying one hot and fast and seeing what happens.
Any thoughts???

I’m following...let me know how they turn out.
 
Hot and fast would be my choice. No more than rare to medium rare, look for the grain to slice across. I see these every week while shopping and only bought them once. Chewy but nice flavor.
 
I’ve only done full slab bone in, but alway low and slow. Cook to buttah @205 or so. Check that, I’ve done individual bone in and I found braising them gave me the best results. The ones I did without braise got a little dry. I’ve only done the thin cross cut Korean style ones hot and fast.

Cooked one hot and fast and it wa s pretty good. Not amazing but pretty damn good.
I froze the rest and will try fake burnt ends when the rain goes away.

I really like this idea. Can’t wait to see them.
