Searwood XL 600, Genesis II E-410, griddle insert for the Genesis, 22" Kettle
2x Baby backs on the Searwood XL. 275 for 2.5 hrs, bones down, spritzed with 50/50 apple cider vinegar & water at 1.5 hrs, and again at 2.5 hrs. Then, wrapped bones up in foil with butter, brown sugar & honey. Spritzed some apple cider vinegar/water in there as well, checked temps at 1.5 hrs, not quite there at ~190 IT, but another 15 min. did the trick. Took 'em off at ~205 IT. Rested for almost 10 min., but we were hungry. Sauced 'em with Hank & Stew's Bourbon+Brown Sugar sauce. Used Smokey Woods Champions Blend pellets. Best ribs I've done yet.

Good plan, great results!
 
Made babyback last week, they turned out great. First coat in rub and put in fridge for 2 hours. I used smoke boost for first 30 mintues, then 2.5 hours bones down @ 225. Then took them off brused in melted butter and Honey, wrapped in foil back on bone side up for 60 minutes. Remove foil back on the grill brush in BBQ sauce for about 45 minutes. Check for slight bounce with tongs, remove from grill back in foil to rest for 10 minutes.

2nd time doing baby backs on this. I don't think I'll ever need to use the Smokeboost feature, it puts out a lot of smoke. Look at that double smoke ring on the ones I just did for Mother's Day.
